Super Easy Pumpkin Cookies

Special Note: The orange zest is a wonderful flavour addition to these little morsels.

 
 
 
 

Ingredients:

  • 1/2c sugar

  • 1/2c pumpkin puree (NOT Pumpkin Pie Filling)

  • 1/2tbsp fresh orange zest

  • 1c flour

  • 1/2tsp baking powder

  • 1/2tsp baking soda

  • 1/2tsp ground cinnamon

  • 1/8tsp salt

Instructions:

  1. Preheat oven to 375 degrees F.

  2. Combine sugar, pumpkin puree and orange zest.

  3. In a separate bowl, combine flour, baking powder, baking soda, cinnamon and salt.

  4. Add dry ingredients to wet ingredients.

  5. Stir to combine.

  6. Create dough balls of desired size ( I use a 2tbsp scoop)

  7. Place on ungreased cookie sheet.

  8. Bake until light brown - about 7 to 9 minutes.

  9. Makes about 12 cookies.
