So Easy Sugar Cookies

A classic simple easy family cookie…no messing around with rolling and cutting out shapes. With only a few minutes to bake, make certain you have someone to share these with because, with first-hand experience, I know how hard it is to step away from these yummy little treats.

So Easy Sugar Cookies

Special Note: Easiest to make with a blender but if your butter is soft enough, these can be made by hand, making for a great arm workout.

 
 
 
 

Ingredients:

  • 3/4c sugar

  • 1/3c butter, softened

  • 1/4c oil (I use my very bland olive oil)

  • 1 tbsp milk

  • 1 - 2 tsp vanilla extract (or other preferred extract like almond, lemon or coconut)

  • 1 egg

  • 1 1/2c flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • Sugar sprinkles (optional but look pretty :))…or simply use plain sugar.

Instructions:

  1. Preheat oven to 375 degrees F.

  2. Beat sugar, softened butter, oil, milk, vanilla extract and egg until creamy.

  3. In a small bowl, combine flour, baking powder and salt.

  4. Add to flour mixture to creamed mixture, stir to combine.

  5. Spread evenly in an ungreased in a rimmed pan no bibber than 15” x 10” X 1”, sprinkle with coloured sugar (or plain sugar)

  6. Bake at 375 degrees F for 10 to 12 minutes. Keep an eye on these, the longer they cook, the crispier they get. So, if you want these a little less crispy, only cook until edges are lightly browned. If you want them crispier, keep cooking until the entire surface is browned. (I prefer these on the ‘less crispy’ side and in my oven, it takes a little less than 10 minutes.)
