Salsa Verde

Okay, so I’m the grocery shopper with the plan and a list. My husband is the person who occasionally comes along and pops the most interesting random items into our buggy, most which end up as a challenge for me to incorporate into our meals. Sometimes we have success and sometimes we don’t.

Recently, one of our grocery excursions ended in success as a can of tomatillos followed us home. With a little time spent on the internet and a few experiments, I discovered salsa verde. Now, I’d never heard of salsa verde before but wow, what a refreshing change from traditional salsa and guacamole. And as an added bonus, while it is a natural fit with tortilla chips, we’ve found that there are a lot of things it pairs nicely with from a frittata or scrambled eggs in the morning to a meaty dinner of steak and potatoes in the evening.

Anyways, give this one a try. With only 6 ingredients and a blender, it’s ready in literally minutes. One note though, while wonderful freshly made, making it the day before serving allows it to naturally thicken to the perfect tortilla chip ‘scooping’ consistency.

Salsa Verde

Special Note: Be careful working with a jalapeño! In the picture below, you can see that I use a disposable kitchen glove when I am prepping a jalapeño.

 
 
 
 

Ingredients:

  • 1 can Tomatillos

  • 1 green jalapeño

  • 1 bunch cilantro

  • 2 tbsp sugar

  • 2 - 3 tbsp fresh lime juice

  • 1 medium clove garlic

Instructions:

  1. Drain liquid from can of tomatillos. Place in a blender.

  2. Add 1/2 jalapeño - seeds and white pith removed…careful with handling the jalapeño (see Special Note above)…and add a little at a time. Every jalapeño carries a different amount of heat.

  3. Add about 1/2c loosely packed cilantro.

  4. Add sugar and lime juice

  5. Optional: Add one clove of crushed garlic…or to taste.

  6. Process for a few seconds. Taste for heat and desired level of sweetness. ( Note: This recipe is a lot about ‘personal taste’. So, be prepared to adjust your level of sugar depending on the heat of your jalapeño and the tartiness of your lime.)

  7. Enjoy right away. Store leftovers in the fridge. This salsa verde will slightly thicken overnight.

  8. If you can find them, awesome served with Lime Flavoured Tortilla Chips.
