Salsa Verde: A Refreshing Twist on a Classic
Okay, so here’s the deal: I’m the grocery shopper with a plan and a list, and my husband? He’s the wild card. He’s the one who comes along and pops random, interesting items into our cart, most of which become a fun challenge for me to incorporate into our meals. Sometimes we hit a home run, and sometimes… well, not so much.
But recently, one of his spontaneous picks—a can of tomatillos—turned into a major success story. With a little help from the internet and a few experiments, I discovered salsa verde. And wow, what a game-changer!
This vibrant, zesty salsa is a refreshing alternative to traditional salsa or guacamole. And while it’s a natural fit with tortilla chips, we’ve discovered how versatile it is. It’s perfect on everything from morning scrambled eggs or a frittata to a hearty dinner of steak and potatoes.
The best part? It’s incredibly easy to make. With just 6 ingredients and a blender, it comes together in minutes. One tip, though: while it’s amazing freshly made, letting it sit overnight in the fridge allows it to naturally thicken to the ideal “scooping” consistency for tortilla chips.

Salsa Verde
Special Note: Be careful working with a jalapeño! In the picture below, you can see that I use a disposable kitchen glove when I am prepping a jalapeño.
Ingredients:
1 can Tomatillos
1 green jalapeño
1 bunch cilantro
2 tbsp sugar
2 - 3 tbsp fresh lime juice
1 medium clove garlic
Instructions:
Drain liquid from can of tomatillos. Place in a blender.
Add 1/2 jalapeño - seeds and white pith removed…careful with handling the jalapeño (see Special Note above)…and add a little at a time. Every jalapeño carries a different amount of heat.
Add about 1/2c loosely packed cilantro.
Add sugar and lime juice
Optional: Add one clove of crushed garlic…or to taste.
Process for a few seconds. Taste for heat and desired level of sweetness. ( Note: This recipe is a lot about ‘personal taste’. So, be prepared to adjust your level of sugar depending on the heat of your jalapeño and the tartiness of your lime.)
Enjoy right away. Store leftovers in the fridge. This salsa verde will slightly thicken overnight.
