One Pan Celebration Cake

Okay - so this recipe is a spin on my one pan ‘wackie cake’, just boosted a bit to turn it into a more celebratory looking cake. Basically, take one wackie cake, delete the chocolate and then add sprinkles. And Voila, a celebration cake :). It’s can be just this simple ;).

Ooh - and remember, an added bonus, this recipe is Vegan :)!

One Pan Celebration Cake

Special Note: 1. I used a silicone bake pan but I regular non-stick pan also works just as well. And if you want to make a layer cake, simply double the recipe :).

2. The recipe here is for a lot of cream cheese frosting…because I love cream cheese frosting ;)! You can easily reduce amount, or entirely omit, of frosting.

 
 
 
 

Ingredients:

  • 1 1/4c all-purpose flour

  • 1c granulated sugar

  • 3/4tsp baking soda

  • 1/2tsp kosher salt (a little less if using table salt)

  • 3 tbsp colourful sprinkles (half for batter and half for on top of frosting)

  • 1c water

  • 1/3c canola oil (bland flavoured oil)

  • 1tsp vanilla extract

  • 1tsp apple cider or white vinegar

  • Cream Cheese Frosting:

  • 8 oz full fat cream cheese, room temperature (the brick kind, not the tub ‘spreadable’ kind)

  • 4 tbsp icing sugar (more or less to taste)

  • 1 tbsp vanilla extract

Instructions:

  1. Preheat oven to 325 degrees F.

  2. Combine flour, sugar, baking soda, salt and sprinkles in an 8” x 8” square metal, silicone or glass baking dish. Whisk together until uniform in colour. Use your fingers to break apart any lumps.

  3. In a measuring cup add water, oil, vanilla extract and vinegar. Stir slowly with a fork or a whisk in small circles to blend. Mash, scrape and stir with a fork or spoon until the mixture becomes a smooth and uniform batter.

  4. Scrape the sides of the baking dish with a rubber spatula and spread the batter in an even layer.

  5. Carefully transfer the dish to the oven and bake until a bamboo tester (I use bamboo skewers, longer than a toothpick and easily reuseable) inserted in the center comes out clean, 28 - 33 minutes. (The skewer should come out looking like it has cake crumbs, and not frosting, clinging to it :))

  6. Remove from the oven, let cool, then frost.

  7. Cream Cheese Frosting: In a mixer, whip cream cheese.

  8. Add icing sugar and vanilla.

  9. Whip all ingredients together and spread on cooled cake.

  10. Top with ‘celebration’ sprinkles :).
