Quick Pickled Red Onions
My current favourite cookbooks are Angela Liddon’s ‘Oh She Glows’ series and this recipe is from her 3rd cookbook, ‘Oh She Glows For Dinner’. These are so simple to make and so yummy added to anything and everything. For instance, I just enjoyed some on top of my salad while my husband loved them in his sandwich. I now try to keep a batch stored in the fridge, always available for a tangy treat anytime.
Quick Pickled Red Onions
Special Note: Sometimes my onions are a little bigger. In those instances, I simply bump the liquid ingredients up by say 50% or even 100% (doubling the ingredients in that case ;))
Ingredients:
1 medium red onion
1c water
1/4c white vinegar
1/4c apple cider vinegar
3/4tsp kosher salt
Instructions:
Using mandoline, thinly slice the red onion and transfer to a heat proof jar.
I a small pot, combine water, white vinegar, apple cider vinegar, sugar and salt. Bring to a boil over high heat, then remove from heat and stir until sugar and salt are dissolved.
Carefully pour hot liquid over onion in heat-proof jar.
use a spoon to push down the onion until submerged in the hot liquid.
Let jar stand uncovered on the counter for 1 hour.
They are ready to enjoy after the hour or secure the lid and store in the fridge.
