Homemade Meatballs: Big, Bold, and Bursting with Flavor

When it comes to meatballs, size does matter—or at least it does in our house! This recipe was inspired by the meatballs from the Italian Kitchen restaurant, where my husband always orders them. What makes them so special (beyond the amazing flavor) is their size: they’re about as big as a softball! Usually, one is plenty for a serving—half is perfect for me.

The Secret to Amazing Meatballs

What sets these meatballs apart is the blend of Italian pork sausage and extra lean ground beef. I split the sausage 50/50—half mild, half hot—which gives the final meatballs a subtle, spicy kick that keeps things interesting.

Now, fair warning: this recipe requires a hands-on approach. Literally. The ingredients need to be mixed by hand, so don’t be afraid to get a little messy—it’s part of the fun! And instead of frying them, I prefer to oven roast my meatballs. The high heat creates a delicious crust on the outside while keeping the inside tender and juicy.

Speaking of roasting, my meatballs tend to be on the darker side, which I love. That extra crunch adds so much texture and flavor. If you prefer a softer, less crunchy coating, just reduce the cook time a little—it’s totally up to you.

Homemade Meatballs

Special Note: The spicy kick you want depends on your ratio of hot to mild Italian sausage meat used.

 
 
 
 

Ingredients:

  • 3lbs extra lean ground beef

  • 1.5lbs mild italian sausage

  • 1.5lbs hot italian sausage

  • 1c fresh grated parmesan

  • 2 eggs

  • 1c oatmeal

  • 1.5tsp kosher salt

  • 1.5tsp fresh ground pepper

  • 1tbsp granulated onion

  • 1tbsp garlic powder

  • 1tbsp onion powder

  • 1tbsp oregano

Instructions:

  1. Preheat oven to 375 degrees F.

  2. In a large bowl, using hands, combine all ingredients.

  3. Shape into baseball sized meatballs (or choose the size you want :))

  4. Place on non-stick lined baking sheet.

  5. Bake for 30 minutes…or until desired doneness is reached.

  6. If desired, remove from oven and combine with a marinara sauce. I simply open a couple of jars of my home canned tomato sauce.

  7. Enjoy in any way that strikes your fancy - I served these over some pasta with an added hit of fresh grated parmesan.
