Chocolate Chip Banana Muffins

I’m not certain anyone can have too many recipes for overripe bananas and this is another one. It’s yummy, easy to make, chocolatey and even better with extra ripe (blackened) bananas. Enjoy.

Ingredients:

  • 3/4c mashed ripe banana (2 small)

  • 3/4c buttermilk

  • 3/4c packed brown sugar

  • 1/4c maple syrup

  • 3tbsp mild oil

  • 2tsp vanilla extract

  • 1 3/4c all-purpose flour

  • 1/4c unsweetened cocoa powder, sifted

  • 1tsp baking soda

  • 1/2tsp salt

  • 1/2c chocolate chops

Instructions:

  1. Preheat oven to 400 degrees F.

  2. In bowl, mix mashed bananas, buttermilk, brown sugar, maple syrup, oil and vanilla extract.

  3. Mix together flour, cocoa powder sifted, baking soda and salt.

  4. Sprinkle over banana mixture and stir until just moistened.

  5. Either grease muffin tins or use non-stick muffin forms (as pictured above), spoon in batter, filling 2/3’s full.

  6. Sprinkle chocolate chips over top.

  7. Bake in preheated oven for 15 to 20 minutes or until bamboo skewer (or toothpick) inserted in center comes out clean.

  8. Let cool in pans on rack.

  9. Remove from pans and enjoy.
