The Only Way to Cook Bacon

While I grew up enjoying bacon and eggs it seemed every weekend, this is one tradition that for health reasons I did not continue with my family. However, we often enjoy bacon around the winter holidays but it was something I dreaded making because of the mess created. Oh, the mess! No matter how hard I tried or how many tricks I tried - lids of some sort or wasteful generous pieces of aluminum foil - the splatter of sizzling bacon grease would always find a way onto the nearest cooking surfaces like the stove top and its backsplash and the nearest counters, and even with the most thorough cleaning, the smell lingered for days.

And then I discovered this method for cooking bacon with the star being a good ‘self-cleaning’ oven, which didn’t exist when I grew up. So, go ahead, fire up the oven Christmas morning and enjoy some nice crispy bacon with some homemade waffles…without all the mess!!

The Only Way to Cook Bacon

Special Note: Get your oven nice and hot!

 
 
 
 

Ingredients:

  • 1 lb bacon

Instructions:

  1. Preheat oven to 475 degrees F.

  2. Grab a rimmed baking sheet, like a rimmed cookie sheet, that a cookie cooling rack will fit into.

  3. Lay bacon on wire cookie rack as evenly as possible (the bacon will shrink during cooking.

  4. At about 5 min in, flip the bacon. Be careful handling the pan as it can easily get off balance and the hot bacon grease could spill out!

  5. Start checking for your desired crispiness after about 5 more minutes. Keep a close eye here because the bacon can go from perfect to burnt in the blink of an eye!

  6. Place on paper towel or a [aper napkin once removed from the oven to finish draining off some of the fat.
