Potato and Lentil Soup

Hey fam! 🥣 I stumbled upon this Potato Lentil Soup in the October 2023 edition of Canadian Living Magazine and thought, "Why not?" Mainly because, surprise surprise, our kitchen was already stocked with everything needed! Now, I know a certain friend who gives lentils the side-eye, but trust me, once they're swimming in this soup, they're nearly incognito. So even if you're a lentil skeptic, give this a shot. And here's a heads up - this 'soup' gets thick and hearty as it cools. Perfect for those chilly days! Besides being oh-so-tasty, it's packed with protein thanks to our sneaky lentils. Mark my words; this is one recipe we'll be revisiting. Get ready for a comforting bowl of yum!

Potato and Lentil Soup

Special Note: The recipe in Canadian Living uses Vegetable broth, which would be good, but I uses beef broth and it was Awesome!!

 
 
 
 

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 3 potatoes, peeled and chopped

  • 2 stalks celery

  • 1 cup red lentils

  • 1 clove garlic, minced

  • 1/8tsp dried thyme

  • 1/2 tsp kosher salt

  • 1/2 tsppepper

  • 1/4 tsp ground cumin

  • pinch cayenne pepper

  • 4 cups beef broth

Instructions:

  1. in a large saucepan, heat oil over medium heat.

  2. Add onions, potatoes, celery, lentils, garlic, thyme, salt, pepper, cumin and cayenne.

  3. Cook, stirring oftes until onion is softened, about 5 minutes.

  4. Add stock, bring to a boil.

  5. Reduce heat to low and simmer until potatoes and lentils are tender, about 20 minutes.

  6. Optional: This one is extra yummy with a bit of grated cheddar cheese on top.
