Marinated Lentils

This is new favorite high protein recipe of mine! These are easy to make and quick, when using canned lentils. As someone who doesn’t eat a lot of meat, I find I keep a batch of these stored in my fridge to top a salad, as a side with another meal or simply on their own as a snack.

Marinated Lentils Recipe

Special Note: While these are super quick to make with canned (and rinsed) lentils, starting with dried lentils also work perfectly. And of course, dried lentils often only take about 20 - 30 minutes to cook.

Ingredients:

  • 2c cooked lentils

  • 1 red (or yellow or orange) pepper, medium to finely chopped

  • 3/4c sliced green onions

  • 1/4c olive oil

  • 1/4c balsamic vinegar

  • 1tbsp dijon mustard

  • 2tbsp maple syrup (or amount to taste)

  • kosher salt and freshly ground black pepper

Instructions:

  1. Drain and rinse lentils (or cook dried lentils).

  2. Chop red pepper and add to lentils.

  3. Slice green onions and add to above.

  4. Make dressing: Whisk together olive oil, balsamic vinegar, dijon mustard and maple syrup. (The addition of dijon mustard and then whisking, emulsifies the oil and vinegar. In other words, helps to keep the oil and vinegar from separating.)

  5. Pour dressing over lentils and vegetables. Toss to coat.

  6. Add salt and pepper to taste.

  7. Enjoy immediately or store in fridge.
