Easy High-Protein Lentil Patties: A New Favorite
This has quickly become one of my favorite high-protein recipes! These lentil patties are not only easy to make but also super quick if you use canned lentils—perfect for busy days when you want something healthy and satisfying.
As someone who doesn’t eat a lot of meat, I love how versatile these patties are. I always keep a batch in the fridge, ready to go. They’re perfect for topping a salad, serving as a side with another meal, or even enjoying on their own as a quick snack.

Marinated Lentils Recipe
Special Note: While these are super quick to make with canned (and rinsed) lentils, starting with dried lentils also work perfectly. And of course, dried lentils often only take about 20 - 30 minutes to cook.
Ingredients:
2c cooked lentils
1 red (or yellow or orange) pepper, medium to finely chopped
3/4c sliced green onions
1/4c olive oil
1/4c balsamic vinegar
1tbsp dijon mustard
2tbsp maple syrup (or amount to taste)
kosher salt and freshly ground black pepper
Instructions:
Drain and rinse lentils (or cook dried lentils).
Chop red pepper and add to lentils.
Slice green onions and add to above.
Make dressing: Whisk together olive oil, balsamic vinegar, dijon mustard and maple syrup. (The addition of dijon mustard and then whisking, emulsifies the oil and vinegar. In other words, helps to keep the oil and vinegar from separating.)
Pour dressing over lentils and vegetables. Toss to coat.
Add salt and pepper to taste.
Enjoy immediately or store in fridge.
