Dad's Crostini
So, what do you do with half eaten baguettes or a foccacia you can’t quite finish. Of course, the more normal thing to do is to freeze the last bits but ‘Dad’ (aka ‘my husband’), had a much tastier idea. Creating crostini out of these end pieces of bread, and serving them with some smooth and creamy cheese, like a brie, was a far more elegant solution. Now I never seem to have leftover bits of bread in my freezer!
Crostini Recipe
Special Note: If there are ever any crostini leftovers, simply store them in a plastic bag. They are just as tasty over the next few days.
Ingredients:
1/2c olive oil
4 cloves of garlic
Kosher salt for sprinkling
Sliced bits of baguette or foccacia
Instructions:
Move oven rack so baking pan will be about 6” from Broil element.
Turn oven on to Broil.
Pour olive oil into a small dish. Add crushed cloves of fresh garlic. Stir to combine. (Note: I often have a dish of fresh garlic infused olive oil on my kitchen counter for use in seasoning savoury meals…veges and meat.)
Slice bread to desired thickness and place on a baking sheet.
Brush with garlic infused olive oil.
Sprinkle with ‘finger pinches’ of kosher salt.
Place in oven under broiler and set timer for 1 minute…but keep a close eye on these as they can go from ‘perfectly browned’ to ‘scorched and blackened ‘in a matter of seconds…this I’ve learned through experience :)!
Remove from oven and cool on a wire rack.
