Craisin White Chocolate Chip Cookies
Do you ever get tired of traditional chocolate chip cookies and or shortbread cookies at Christmas time. I did. The result was my creation of this recipe, craisin white chocolate chip cookies, which literally won a local cookie competition. A word of warning - these cookies are sweet and irresistible :)!!
Craisin White Chocolate Chip Cookie Recipe
Special Note: Watch your oven closely when cooking these. A chewy cookie needs less baking time than a crisper cookie.
Ingredients:
1/2c softened butter
3/4c firmly packed light brown sugar
1tsp vanilla extract
1 egg
1 1/4c all-purpose flour
1/2tsp baking soda
1/8tsp salt
3/4c white chocolate chips
3/4c craisins
Instructions:
Preheat oven to 375 degrees F.
Combine butter, sugar and vanilla on high speed until light and fluffy.
Beat in egg.
Sift together flour, baking soda and salt, adding to above.
Mix until just incorporated.
Mix in white chocolate chips and craisins until blended.
Spoon onto ungreased cookie sheets and cook until done (approx. 8 minutes in hotter oven for soft cookies and up to 15 minutes for criper cookies).
Makes about 24 cookies.
