Chicken Noodle Soup

Chicken noodle soup is a standard classic soup and so easy to make. And trust me when I say that when you walk into the house with a batch of this simmering on the stove, you’ll instantly feel warm and loved.

Special Note: This recipe is a lot about ‘feel’. There are no hard and fast measured ingredients. For instance, if you only have one onion on hand, fine - go with that…same goes for rest of veges and chicken. If it seems like there isn’t enough broth, top up with a cup or 2 of water, don’t worry about diluting the flavour because there is tons of flavour in this recipe.

Also, go easy on salt and pepper…all broths are a little different. And everyone can always add more salt and pepper to their own individual serving.

Finally, if you’re thinking about making this soup, cook some extra chicken at your next chicken dinner. In this batch, I roasted a whole small chicken that we enjoyed for dinner one night and then added the leftovers to the soup I made a couple of days later.

 
 
 
 

Ingredients:

  • 2 medium sized sweet yellow onions, diced

  • 4 branches of celery, diced

  • 3 or 4 med - large carrot, diced

  • kosher salt and fresh ground pepper

  • diced cooked chicken

  • 2 L vegetable broth

  • 1/2 c soup noodles

Instructions

  1. Assemble and dice ingredients.

  2. In a large pot, saute onions on medium heat until just starting to become transparent.

  3. Add diced carrots and celery. Continue to saute for about another 5 minutes…just enough to begin to take the super hard edge off the vegetables. Do not fully cook because further cooking will occur after the broth is added.

  4. Season with salt and pepper. Seasoning at this stage allows the flavours to embed in the vegetables.

  5. Add diced chicken, stir to combine.

  6. Add the broth and bring to a low boil over medium heat, reduce heat to low and allow to simmer for about 20 minutes.

  7. Add the dried noodles and simmer for about 5 minutes.

  8. If you’re planning on eating this later in the day, tun off the heat…noodles will continue to cook as the soup cools. Reheat at meal time.

  9. If you’re planning on eating this right away, continue to cook slowly until the noodles are at your desired firmness.
